Back when we lived in Missouri and I was in college, Donnie created his very own chili recipe. I would say that it was around this time that we were really enjoying diving into cooking and beginning to create our own recipes. I even still have the original piece of paper that he wrote it down on. Over the last several years he has enjoyed making this chili for family and friends. It is something he is definitely proud of, and I don’t blame him-it even has BACON in it! Donnie set out on a quest to create his own chili recipe because he couldn’t find what he was looking for online. He had a few requirements such as wanting a recipe that had some spice to it, as well as wanting one that didn’t include any beans.
We made the chili this week with elk meat and it was just as delicious! It is a go-to recipe and a comfort meal for us that reminds us of where we started. If anyone would have told me at the time that Donnie created this recipe that I would one day feature it on my own blog I don’t know if I would have been able to believe it. I have to say for a while now I have thought about this recipe and known that it deserved to be on here. Chili is relatively easy to make, there is likely no right or wrong way to do it, and you can absolutely make it so many different ways-but we hope you’ll give this one a chance!
Ingredients
- 2 pounds of hamburger
- 1/2 pound of bacon
- 1 diced onion
- 1 diced green pepper
- 46 oz diced tomatoes
- 6 oz can of tomato paste
- 1/2 teaspoon cayenne pepper
- 1 tablespoon of black pepper
- 1 tablespoon of garlic powder
- 4 tablespoons of chili powder
Directions
This recipe is very simple to put together. First cook the bacon, and get rid of the majority of the bacon grease. Cook the diced onion and green pepper in that same pan. While you are doing this, cook the hamburger in a pot. Once the bacon, onion, green pepper, and hamburger is cooked combine into the pot that the hamburger is in. Add the tomato paste, diced tomatoes, spices and then bring to a boil. Once the chili has come to a boil, reduce it to low heat and simmer for 30 mins up to an hour (your preference). ENJOY!

I have made Don’s recipe before and it is truly amazing. I personally do not like a lot of beans in my chili. No beans is even better!
