It has only been in the last few years that I have considered myself a healthy and homemade chef. I absolutely love making homemade food, and finding a healthy twist makes me even happier. It would only be right for me to have the first From the Kitchen post I share with you to be about the recipe that inspired me to become a healthy and homemade chef.
I’ve been making this recipe since my college days. It’s special to me for many reasons. Finding this recipe brought me to the realization that everyone is capable of making healthier, more nutritious food, even on a budget!
When I first found this recipe I made it constantly, at least once a week. Fast forward a few years, and you can still find a bowl of these in our fridge basically at all times.
For me, one of the greatest joys of making healthy and homemade food, is sharing with friends and family. Let’s get into the recipe, because I can’t wait for you to try these yourselves!
You only need 6 ingredients to make these delicious homemade energy bites!
Ingredients
- 1 cup Oats
- 1/2 cup Ground Flaxseed
- 1/2 cup Peanut Butter
- 1/3 cup Honey
- 1 teaspoon Vanilla
- 1/2 cup Chocolate Chips
Directions
In a big bowl, mix together the oats and flaxseed. Next, stir in the peanut butter, honey, and vanilla. Finally, the chocolate chips!
Once everything is mixed together, place in the fridge for about 10 minutes. Then, using an ice cream or cookie scoop, or a spoon, form and roll into balls. Place in a bowl with a lid, and store in the fridge.
If you don’t have any flaxseed, you can probably leave it out, I have before, and they still turn out delicious. Sometimes I even add in a little bit of extra honey to make them more gooey.
These energy bites are so versatile in my opinion! We’ve enjoyed them as a quick breakfast on the go, midday snack, after dinner dessert, and as pre-workout fuel. I hope you enjoy them just as much as we do. I often even double the recipe, trust me they go quick!
